  1. Cut red potatoes into cubes boil just until they are a little tender but still have slight resistance when tested with a fork or knife you are not making mashed potatoes people there should still be somewhat resistance in the potatoes.when potatoes are done cooking strain them and and allow them to cool for at least 45 minutes in the fridge.meanwhile chop your cooked boiled eggs if you prefer to leave in the yolks make sure that you at least mash them first remove potatoes from fridge and add the mayo,red onion,bell pepper,celery,mustard and sugar and salt the salad should not be dry but not soupy either if you follow the directions you should have great potato salad .
