A great easy cake. The recipe was given to me,by my friend Geraldine.
- 2 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking soda
- 1 cup walnuts (crushed)
- 1 (8 ounce) can crushed pineapple, DO NOT drain (put the whole thing in)
- Mix all together, and pour into a greased 13x9 inch pan. bake at 350 for 30 - 35 minute
- Frost with cream cheese icing.
Mine turned out horrible with a rubber texture.
Unbelievably yummy cake! Not too sweet, and did a double take when I went to make it b/c I hadn't realised there is no butter or oil in it.. super nice and healthy touch. Used half light brown sugar b/c I ran out of white the first time and all light brown granulated the second time and worked fabulously. Insted of cream cheese frosting I finished with a glaze of dried coconut, icing sugar, and pineapple juice. Then decorated with sugared pineapple chunks. thank you for a brilliant recipe!
