Best of Both Worlds Garlic Dip

Toasting garlic in high heat over short period of time gives this dip the roasted flavour while still having a bit of the raw garlic bite. Cheeses should be well-chilled for better processing.

  1. Mince garlic with food processor or grater, preserving as much juice as you can.
  2. Heat a small pot or pan over low heat until hot. Add olive oil, garlic and salt, and cook for 1 minute. Increase heat to high, stirring and scrapping frequently. As soon as garlic starts to change colour, remove from heat and continue to stir until golden brown. Set aside.
  3. Grate Mozzarella and Monterey Jack in food processor until shredded. Add toasted garlic and pulse until fine.
  4. Add yogurt, Miracle Whip, cream, ground black pepper and sugar. Pulse constantly until smooth.
  5. Refrigerate until ready to serve.
