True to their name, these were the best salmon croquettes we ever tried. Even my son ate them and said I should make them more often. Great flavor and simple to make. Thanks !

I made half a recipe for the 2 of us using a good quality of Alaskan canned salmon. I made 4 nice patties which were shallow fried in a cast iron skillet. The croquettes were tender on the inside and crisp on the outside. A 1/2 teaspoon of Old Bay Seasoning was added. These were served along side Basic Aioli.

I made this recipe a couple of months back and the family loved it. I couldn't find my previous print out. Looking through the recipes on the web for fluffy croquettes, I found it again because of the potato flakes. Thank goodness, they are so fine. Thank you. Chris, Memphis TN.

I love salmon croquettes made with potato. They are so much lighter. This is a good recipe. I replaced the grated onion ( I didn't feel like crying today!) with 1/2 packet of Hidden Valley Ranch Dressing. Yumm... Thanks!

To make it very low fat, I used 1/4 cup fat free pioneer mix instead of flour, Pam instead of oil and used no baking powder. It turned out PERFECT..!
