This is the best carrot cake that I have ever tasted. It has a really nice flavour that you won't need to try any other carrot cake recipes.

  1. Sift together all dry ingredients.
  2. In large bowl, stir together sugar, eggs and oil with wooden spoon until well blended, about 5 minute.
  3. Add flour mixture a little at a time, mixing well after each addition.
  4. Add carrots, nuts, pineapple and coconut and blend thoroughly (squeeze juice from carrots and pineapple).
  5. Bake in greased and lined springform pan for about 60 to 90mins @ 180°C.
  6. Cream cheese frosting - cream butter, cream cheese and vanilla. Add icing sugar a little at a time and blend well. Add a tsp of milk if the mixture too thick.
