directions

 • Fry bacon until done but not crisp, add minced garlic half way through cooking bacon. Drain fat and set aside.
 • In a bowl mix eggs, rosemary, thyme and pepper until blended.
 • Add pork, shallot, onion, and the rest of the ingredients including the bacon/garlic, but not the cheese.
 • Mix thoroughly and form patties.
 • BBQ on medium for 10-12 mins per side.
 • Top with cheese and your favorite toppings on a bun.
 • * I mixed mayo, mustard and some finely chopped red onion together to spread on the bun -- delicious!

 1. I liked these, they were kinda wierd and felt like some mad science experiment when I was preparing them. But they were worth the trial! My husband is a devoted plain old hamburger fan, and he grudgingly said he might eat these once in a while ;) I think they need some salt added to the mix before cooking, and we didn't do the cheese, we're very alergic to milk prod. I served these with cole slaw #47606 and breaded okra. Great meal! Thanks for posting!

 2. EASY! I used left over bacon. Didn't have shallots. Turned out amazing and will BBQ pork way more often than I ever have before. Tried it with ground turkey and turned out just as scrumptious! THANKS

Tweaks

 1. The last time I made this, I peeled and roughly chopped the scallions and onions, added the garlic and pulsed in a food processor a few times. Then added the bacon, cut in 1" pieces and dry spices and pulsed till finely chopped. Added all ingredients and proceeded... worked out perfect. I have also played with the spices ????

I post what I cook. It's an eclectic, and hopefully simple collection of recipes. I'd love to post most of what I cook, but frankly I'm not good at the measurements and I tend to be a 'add a dash of this and that' kinda cook. As a result, I can be a little lazy in posting recipes. I strive to make large meals that don't cost a lot, I've got 4 kids. Yes they eat what I post :) My main goal these days is to get the most out of what we pay for groceries...with 5 large eaters me, we're on a 'below low income level' budget, it's important to buy cheap and cook around the ingredients. Some recipes come from splurges ;) Use the recipes as a guidline and modify to suit your tastes.
