I agree with others- This was excellent- and EASY! I was not sure whether I was supposed to cook the broccoli first or not- I did. I added about 1.25 cups mild cheddar and it was excellent- I think sharp would have been even better. Thanks for a great recipe.

OUTSTANDING! I followed the recipe exactly except I used 1/2 cup of Cabot seriously sharp cheddar. Thank you for posting such a wonderful recipe!

Yes, definitely a 5 star recipes. I used 1/2 of an onion I had left from another recipe and it was still almost too much .. so probably depends on the size of the onion. I think next time I'll limit the onion to 1/2 cup of chopped onion. I also used my own homemade chicken broth so it's a little richer than what you buy in the store. I need to use up the broccoli in the garden so this is going to fill the bill ... I'll have plenty of great soup to eat throughout the year. Thanks for a great recipe.

VERY good soup recipe. I used a cheddar cheese instead of Velveeta and I used about 1-1/2 cups of the cheddar. I also substituted about a half a cup of the milk for with half and half and it turned out great! My BF loved too. Will make again for sure. Thanks!

I have been making this for years, the only thing I do different is add a good splash of cooking sherry, and make a cheese sauce (putting shredded cheddar in with the cream sauce until melted) instead of Velveeta, next time I'll try the Velveeta it might be easier.

During broccoli season, I was looking for a way to use up my bumper crop besides just freezing it. This delicious recipe was the answer! I made the base, pureed, and froze it, adding a label with the instruction for the cream sauce. When ready to serve, I defrost the base in the microwave while I make the cream sauce, then combine the two parts and sprinkle in the cheese (I use Cheddar). It was wonderful! It would be even easier using Vina's suggestion of just adding cream to the base. Thanks, Barb, for a delicious and useful recipe.

This is a very good soup even though I forgot to add the milk-- LOL. I will probably re-rate it the next time I make it. I made subs: soy marg for butter, powdered garlic for garlic clove, shallots for onion, no celery, real chicken broth, gluten free flour, and Trader Joe's block mozerella (1/2 cup). Forgot the milk but would have used orig. almond milk. Was very tasty.
