This is so good and easy! I followed it exactly except used 1 cup half n half and 1 cup 1% milk. What a great recipe! Creamy and rich and savory. This is a keeper.
I just made the soup and it is rich and delicious. I added more garlic and backed diced chicken (I used the gravy from the chicken in addition to the broth) to make a meal out of it. I had broccoli given to me from a veggie tray at a picnic and I could not eat all of it so I went online for this 5 star rescipie. My Mother is very picky but loved it also. I used the Velveeta but added cheddar also as I love cheddar.
Excellent soup! I didn't care for the other popular cream of broccoli soup recipe on this site, so when I received more broccoli from my food co-op, I decided to try this recipe and I'm so glad I did! I sauteed the veggies in homemade vegetable broth instead of butter, skipped the flour and butter altogether, added about 1/4 cup of raw cashews (blended in my VitaMix--really makes soups like this creamy), used almond milk and used about 1 1/2 cups of sharp cheddar cheese in place of the velveeta. I just realized I forgot to add the pepper and it's still delicious! Normally I'm not a big fan of broccoli, but this makes it easy to like. Thanks for the great recipe!

As a new cook, this was easy and delicious! And yes, I followed the directions exactly, even using the Velveeta. I'm planning on bringing this to a soup luncheon at work!
Very very good! I used aged sharp cheddar and swiss instead of velveeta, and did 1 cup lowfat milk and 1 cup heavy cream instead of 2 cups milk. But besides that, I followed the instructions down to the hand mixer (great idea!!). It was so easy! Absolutely delicious! I will definitely be making this again! Thanks Barb!

Has anyone frozen it? It made a lot for 2 people.
Very good. I like that it is easy. I added just a little sherry to give it a pop. Also used Cabot very sharp cheddar. Thank you for sharing.,
I agree with others- This was excellent- and EASY! I was not sure whether I was supposed to cook the broccoli first or not- I did. I added about 1.25 cups mild cheddar and it was excellent- I think sharp would have been even better. Thanks for a great recipe.
