While working at a home show in Indiana, I happened upon a fella named Ole Bill. He was selling spices. I tried his chili and knew that it was the best I'd ever tasted. That was 20 years ago, and I haven't made chili without using his Championship Chili Spice Blend since. I have, however, added a few extra ingredients that I think make his recipe even better. Ole Bill has a website now: oldewestportspice.com. Very Important Note: The specific spice blend is what makes this recipe special. Without it, this is just another chili recipe.
- 1 1⁄2 lbs ground beef
- 15 ounces tomato sauce
- 15 ounces chopped tomatoes
- 15 ounces kidney beans, rinsed & drained
- 1 onion, chopped
- 1 green pepper, chopped
- 1⁄2 cup chili powder, blend (only Olde Westport Championship Chili Spice Blend)
- Put ground beef, onion & green pepper in a skillet and cook until ground beef is cooked.
- Drain, and transfer to a pot.
- Add tomato sauce, chopped tomatoes, and kidney beans, and Olde Westport Championship Chili Spice Blend. Stir.
- Bring to a boil, then lower heat to low and simmer about an hour.
- If chili gets too thick, you may add a little water to thin it out a bit.
