I took this to work for a retirement party and I had so many compliments that I thought I should be on a cooking show on TV. ;-) I was requested to make it 3 more times in the next 2 months for other occasions. My family loves it and people are still talking about it when they see me. Thanks for the real winner!

Easy to make. I did use 1 cup light brown sugar in place of part of the white sugar...just like the taste and texture better. Also didn't have enough walnuts so I mixed half pecans and chopped them vey fine in my processor (the kids never know that there are nuts and carrots in the cake when I pulverize them!). I used my own frosting recipe that is very similar to this recipe except my frosting contains a spritz of lemon juice (about 3T) and the spice mace (1/4 tsp) from an old recipe that I've used forever. I don't use the coconut but I may try it next time:) The cake is delicious!

The cake was delicious . . . only I added raisins and coconut into the cake batter and only had to cook it for 30 minutes. I also bought my own icing and when I toasted the coconut, I also put walnuts on top. Great cake! Everyone loved it.

This was the best carrot cake that I have EVER tasted. I really didn't want to use so much oil but decided to make the recipe exactly how it was posted and I was glad I did. I absolutely love love love this carrot cake.

Fantastic carrot cake recipe. I omitted the walnuts and coconut because I didn't have any, but otherwise followed spot on and it came out wonderfully! I'll definitely use it again. Thank you!

Great tasting!! Made a few adjustments to make it as healthy as possible for cake; did not use any oil, 14 oz can of crushed pineapple instead, added 1 cup of carrots, grated nutmeg, and 1 more tsp of vanilla. Frosting, used half of cream cheese and completed with plain yogurt (drained). A family hit - will try making them into cupcakes to make it easier to transport. Thanks for sharing your recipe!

This is a fabulous recipe; my husband liked it and he doesn't even EAT carrot cake! I only had a half cup of walnuts so I added a bit more carrots than the recipe called for. I also used a splash more vanila in the frosting. The result? I deliciously moist carrot cake with creamy frosting. This was the first time I made a carrot cake but I will definitely use this recipe again in the future. Thanks for sharing!

I can't say enough about this cake!! My co-workers BEG me to bake this cake and complain when it's all gone. It's funny watching a group of otherwise civilized folks, elbowing each other to get a slice of my cake. I love it! It's quite a compliment when, rather than not have a taste at all, someone scrapes the crumbs off of your cake plate at the office luncheon. UPDATE: 10/28/2009 I've sold 3 of these cakes for $25 each and I expect more orders with the holidays coming. Thanks, Leslie!

This was an easy and delicious recipe. Very moist. I made it for my mother's 75th birthday as carrot is her favorite cake, and she said it was the best anyone ever made for her.

This Carrot Cake is so easy and delicious!! I did change up the recipe, I added 1 C raisins, 2 teaspons of cinnamon and eliminated the pineapple. I found carrots already grated and am now using those, I also use more carrots than called for in the recipe. It has now become the favorite birthday cake in my family.

This is excellent. I used a springform pan [10"] and I had my doubts when I took it out of the oven because I was not high enough for me. I was a great texture though, very moist and everyone loved it. I made it a second time and used 2 tsp of cinnamon instead of one and a cup of coconut. With these changes I think this cake is perfection. Hubby said it is the best cake I have ever made and he is not a huge cake fan. I did not like the icing however it was not sweet enough for me. My recipe calls for a lot more icing sugar and thats how I like it. Lots of reviews said they enjoyed the icing as is so my advice would be make it as is and just keep adding icing sugar if its not sweet enough for you.

Fantastic carrot cake. My husband hates carrot cake, and he ate 4 squares! I omitted the pineapple and replaced it with one cup of golden raisins. I also made a bigger batch of frosting, using 1.5 cups of powdered sugar, .75 cup of softened butter, 3 tsp of vanilla, and 16oz of cream cheese.

this is by far my favorite recipe for carrot cake. i cant explain how amazing it is. i brought it a dinner party and my friend's boyfriend is still talking about it. SO GOOD!! :)

1 of the BEST CARROT CAKE I've tried...besides almost burning down my house toasting the coconut....lol...the cake was delcious! I added more sugar to the frosting and substituted the chopped pinneapples for crushed ones....LOVED IT! next time I will not even attempt to toast the coconut flakes! :)
