Best Bread Machine Roll Dough

- 2 1⁄4 teaspoons dry yeast
- 1 cup lukewarm water
- 1⁄2 tablespoon lukewarm water
- 3 cups flour, may use up to 1 1/4 cup wheat flour in place of white flour for better nutrition (start with 3 cups flour and add a little if too sticky, amount may need to be adjusted based on your)
- 1 1⁄2 teaspoons salt
- 1 1⁄2 tablespoons sugar
- 1 1⁄2 tablespoons nonfat dry milk powder
- 4 1⁄2 teaspoons butter or 4 1/2 teaspoons shortening
- 1 egg, large

- Pam cooking spray
- 2 -3 tablespoons butter
- parmesan cheese

- Mix yeast and warm water in breadpan to proof.
- Add remaining dough ingredients. Start manual bread setting on bread machine.
- When it is well mixed, touch to see if it feels too sticky (in my machine, you can touch it to test after about 4 minutes of mixing). If you are not an experienced bread maker, you may need to experiment with figuring out the right stickiness. If it is too sticky, it will be difficult to make it into rolls, if it has too much flour, the quality and flavor will not be the best. The goal is to get a good, workable dough that is just barely past the too sticky point.
- Run on dough setting in bread machine (my setting is 1 1/2 hours).
- Divide dough into 6 pieces.
- Divide each piece into 4 pieces. Roll all 24 pieces into balls.
- Spray pam on muffin tins (for 12 medium/large rolls) or your choice of baking pan.
- Melt 2-3 T butter.
- Roll each piece in butter, and put 2 pieces in each tin side by side (or side by side in pan).
- Sprinkle with parmesan cheese (when I first married 13 years ago, I used canned parmesan cheese. Now I use the real stuff and buy it in bulk at Costco -- it's much better!).
- Cover and let rise in a warm place for 30 minutes.
- Bake at 375 for 10-11 minutes.

- If you are using them for the pull apart recipe I listed above, do not bake first!

I'm a stay at home mom with 4 children. I love discovering great recipes and cooking techniques. Since my 4 children have recently gotten out of the preschool years, I have taken more time to catalog and organize my recipe collection. I appreciate all the wonderful recipes I have found here and the effort to input them. My family and I appreciate the good food that has become part of what we regularly enjoy eating.
Besides cooking and taking care of my children and family, I love reading and playing piano. I also love classical guitar, and as my kids grow older, I would like to devote time to learning to play better (I'm really just a beginner). The arts bring me a lot of joy (music, visual, performance, literary, culinary). I also find joy in the beauty that is in the world and nature... I'm fortunate to live close to the beautiful Wasatch Mountains and not too far from many beautiful national parks in the state of Utah.
I feel we have a responsibility to reach out and help others, and as a follower of Jesus Christ, I hope to make a positive contribution to my family, local church congregation, neighborhood, community, and to worthy causes that inspire me. I find that many charitable organizations are not giving enough to help the less fortunate or to whatever is their cuase, but I really like The Smile Train, and the programs of the Church of Jesus Christ of Latter-Day Saints which are mostly run by volunteers (main humanitarian missions... eyeglasses, clean water , Neonatal Resuscitation, Emergency Response, Wheelchairs, Food Production, and Immunizations).
I am very thankful for a good and abundant life and am sad for the great suffering that many people endure in life. I believe in an Eternal equalization or fixing of injustice, and I look forward to the day God will surely make everything right.
