Tried this today since I had three over ripe bananas. it was quick and simple to prepare and has a really great taste and texture. I made six mini's only me and my DH, so it lasts longer this way!!!! We've enjoyed one loaf already today.I sometimes like to top my loaves with a maple flavored butter frosting. Thanks for the good recipe.
