I wish the baking time for the bread AND the muffins were together in the recipe where the bread baking time is..now I have 16 over baked muffins...glad I had enough bananas to make some more.

  1. Cream together butter and sugar.
  2. Add eggs and crushed bananas.
  3. Combine well.
  4. Sift together flour, soda and salt.
  5. Add to creamed mixture.
  6. Add vanilla.
  7. Pour into greased and floured loaf pan.
  8. Bake at 350 F, 60 minutes.
  9. Keeps well, refrigerated.
  10. Yield 1 Loaf.
  11. My notes: I made muffins, so changed title to include that.
  12. VERY moist and flavorful.
  13. Sticky.
  14. Big hit.
  15. We added pecans.
  16. In other bakings, I've added walnuts.
  17. Both are fantastic.
  18. Bake muffins 16-19 minutes.
  19. Additional notes: I've made this using frozen and thawed bananas and it was perfect.
