Best Baked Potato Soup

"This is a combination of different potato soup recipes that I borrowed from. It is rich and makes a lot so you might want to split the recipe in half. This is always better the next day or so."

  • Bake potatoes and cool- I put them in the freezer but if you have time bake them a day before and keep them in the fridge.
  • Chop Green onions and set aside.
  • Shred cheese (Or buy pre-shredded) set aside.
  • Chop bacon into 1/2 inches pieces and fry in a medium pan and remove when they are at desired crispness- save the grease.
  • Cut cooled potatoes into cubes- skins on or off your preference.
  • In a large Pot over low heat, melt butter with bacon grease.
  • Stir in flour; stir until smooth and bubbly.
  • Gradually add milk, stirring constantly, until sauce has thickened (to the consistency you would want the soup to be).
  • Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble. Reduce heat; simmer gently for 10 minutes.
  • Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately.
  • You can reserve some of the cheese bacon and green onions for a topping.

  1. Absolutely delicious! I add whole lot of spices to it. Garlic salt, especially. I also added two containers of sour cream. I tried the idea of caramelizing the onions first, and it really brings out the flavor of the onions better. It is very filling and very tasty!!
     
  2. Delicious! This is very similar to the recipe that I use. However, I caramelize the onions in the bacon grease before making the roux. Then I add the milk, cubed potatoes, salt and pepper and then simmer until done. If I need to thicken the soup, I add some instant potato flakes or mashed potatoes to the pot. It is a very rich, delicious and filling soup. My family loves this recipe and it's easy to make! Thanks for sharing!
     
  3. This is the best potato soup! It is my daughters favorite. I do have to add a little more milk as it gets quite thick.
