this is simple, quick and delicious!!!!
- 1 pint blueberries
- 1⁄2 pint blackberry
- 1⁄2 pint raspberries
- 3⁄4 cup sugar
- 18 ounces vanilla cake mix
- 1 cup pecans (chopped)
- 1⁄2 cup unsalted butter (melted)
- preheat oven to 325f quickly rinse the berries and dump them into a 13x9 baking pan, spreading them out evenly on the bottom of pan.sprinkle the sugar over the berries, and then sprinkle on the cake mix, followed by the chopped nuts.pour the melted butter over the nuts.bake until the berries bubble and the topping is brown, about 1 hour.
I substituted yellow cake mix for the vanilla cake mix because I already had it in the pantry. I used frozen berries (which worked out fine). I excluded the nuts but added a sprinkle of a cinnamon/sugar topping on top (after the butter). Everything was perfect. There are so many ways to tweak it to your preference and it is FAST!!!
I substituted frozen mixed berries and used lemon cake mix. Delicious!
I had all these berries in our weekly CSA box and was looking for a way to use them for dessert. I also had all the other ingredients on hand, so it seemed like a perfect match. Well, the only thing lacking was that I didn't have vanilla ice cream on hand to enjoy with this delicious dessert. I used slightly less than the sugar indicated, just because that was all I had left, and it didn't suffer at all. I also used double the blackberries as I had that many. Very yummy summer time dessert! Thanks for sharing!!
