  • 473.18 ml Strawberry Berry Burst Cheerios
  • 295.73 ml whole wheat flour (the recipe calls for AP flour but I wanted to use whole wheat) or 295.73 ml all-purpose flour (the recipe calls for AP flour but I wanted to use whole wheat)
  • 78.78 ml brown sugar, packed
  • 4.92 ml baking powder
  • 3.69 ml baking soda
  • 236.59 ml banana, mashed, very ripe (2 to 3 medium)
  • 157.80 ml nonfat milk (recipe calls for skim milk but I wanted to use non-fat milk)
  • 44.37 ml vegetable oil
  • 1 egg white

directions

  • Heat oven to 400°. Spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups.
  • Crush cereal. Stir together cereal, flour, brown sugar, baking powder and baking soda in large bowl. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • Bake 18 to 22 minutes or until golden brown.

  1. These were pretty good! My family didn't care for the cereal itself, so I thought this was such an awesome way to get rid of the uneaten cereal. I tasted the batter and it seemed a bit bland, so I added a pinch of salt and about a teaspoon of cinnamon. I used 1/2 whole wheat pastry flour and 1/2 whole wheat flour and lowfat buttermilk. I folded in some blueberries as well, because even though there are dried strawberries in the cereal, it wasn't enough in quantity for our tastes. The end result was a nicely textured muffin with a very subtle berry flavor, kind of like a softer version of a bran muffin. My only real problem were with the dried bananas in the cereal. Once these cooked within the muffin they turn into these kind of wet, slimy blobs - very unappealing - so we just all ate around them. Thanks for posting the recipe.
