This was yummy. I like the wine flavor in it. The vanilla bean got a little lost, so I think I might use extract next time. I made this with blackberries, raspberries, blueberries and strawberries. The blueberries worked the least well because they are less permeable. I didn't have arrowroot in the house, so I subbed cornstarch and used maybe double, and it worked fine. This was even better the second day!
OUTSTANDING! Was going to cut the recipe down, but am so glad I didn't, 'cause it's great with ice cream or pound cake (or even as is)! I always have frozen berries on hand for smoothies, but decided to go fresh this time, since I found fresh blueberries, raspberries & blackberries at Costco the other day! FABULOUS!!! I cannot believe how EASY this was to make, but the WOW factor it gives! YIKES! This is such a favorite for me now -- so impressive...The only thing I had to do differently was use frozen mixed berries that I thawed first. I will make this every time I have company, and I will be using fresh berries to boot! (The frozen worked really well, but I want to taste this with the fresh fruit...) Served it over vanilla bean ice cream...YUM!
I made this with all bluberries and layered it in parfait glasses with some frozen vanilla yogurt. Looked beautifu; tasted wonderful!
