We have a ranch in West Texas and it's very difficult to find edible quail recipes that don't involve smothering the quail in bacon. The quail came out perfectly cooked and not dry. This recipe (exactly as is) was the easiest and best I have come across. It was also the favorite of my guests out of the four recipes I tried and it was by far the easiest. Thanks Benpw!

Easy as pie to make this and my family loved the taste. I added a little extra light olive oil to the baking dish to keep the birds from sticking.
