      Awesome and easy recipe - I sauteed a medium onion in butter with a little minced garlic and served the salsa on the side rather than inside. Edited to say that I now use coconut oil to fry these babies up - it produces a lovely non-greasy texture that simply cannot be duplicated with butter.

      Very quick, simple recipe to prepare. I made some changes, knowing what our taste preferences would be. I added chopped fresh cilantro to the tomato and onion mixture. I used Penzey's fajita seasoning, about 1 tablespoon. They turned out wonderful! I think to make them again I would add garlic to the chicken mixture. Great recipe for a quick weeknight dinner.

      I have tried so many different recipes for quesadillas, this one was OUTSTANDING! Minus the onion...of course ;) Absolutly fabulous!

      Yum! I had a time with these sticking though. I used some spray and that solved the problem. Great flavor in the chicken. Next time tho I think I will keep the chicken dry and w/o sauce. Personal pref. I followed this to a T but I did saute the onion with the chicken as my family does not care for it raw. Excellent recipe! Different with the mozzarella and cheddar cheese. I did not find a blend so I grated my own and made my own blend of 50/50. Thanks for a great recipe that whips up quickly!

      These are great, so quick and easy. Husband LOVES them because they are closest to Friendlys version I've done. I double and chicken refrigerates and heats up great. He snacks for days...thanks
