I just made this relish after having a surplus of peppers. It comes from the "Country Cooking" Cookbook from Cracker Barrel.
- 2 cups chopped red bell peppers
- 2 cups chopped green bell peppers
- 2 cups chopped onions
- 2 cups chopped celery
- 2 1⁄4 tablespoons salt
- 1 1⁄3 cups sugar
- 2 1⁄3 cups cider vinegar
- Cover the vegetables with boiling salted water and simmer for 10 to 15 minutes. Drain well.
- Add the remaining ingredients and 20 minutes. Pour into sterilized jars. Seal. Process for 15 minutes in hot water bath.
