I just made this relish after having a surplus of peppers. It comes from the "Country Cooking" Cookbook from Cracker Barrel.

Directions

  1. Cover the vegetables with boiling salted water and simmer for 10 to 15 minutes. Drain well.
  2. Add the remaining ingredients and 20 minutes. Pour into sterilized jars. Seal. Process for 15 minutes in hot water bath.
