Bell Pepper Pie With Orange and Feta

A great colourful pie with cooked, sweet bell peppers and onion, savoury olives and feta, and the sunny taste of orange! A whole-wheat crust or a crust with some rye flour might work better than a regular one - the original recipe, by Arja Brück in Maku magazine, calls for a rye & potato crust (from the freezer section! ;-) and the nutty flavour goes really well with this.

  1. Preheat oven to 200°C.
  2. Chop bell peppers and onion.
  3. Heat the oil in a pan, cook bell peppers and onions until softened.
  4. Mix eggs, egg yolk and cream. Add orange zest and juice, mix.
  5. Pour cream&egg mixture into the pie shell. Add cooked bell peppers and onions. Sprinkle with a bit of salt, sugar and ground paprika. Sprinkle chives on top.
  6. Add olives and cubed feta.
  7. Bake in the preheated oven for about 20 minutes or until set.
