Directions

  1. Combine water, butter, sugar and salt in a heavy saucepan. Heat to boiling.
  2. When the butter melts, add flour. Beat with a wooden spoon over medium heat just until the mixture pulls away from the side of the pan.
  3. Remove saucepan from heat and beat in eggs, one at a time, until the batter is smooth.
  4. Beat in vanilla.
  5. Heat oil in a heavy skillet to 375 degrees. Drop batter by teaspoonfuls into the hot oil.
  6. Brown on both/all sides. Remove with slotted spooon and drain on paper towels.
  7. Keep warm.
  8. Serve with a warmed jelly sauce of your choosing - apricot, raspsberry, strawberry, grape -- .
