"I just picked some fresh beets from my garden (the kids had planted them) and so I decided to make something they would enjoy."

  • Chop off the roots and stem from the beets and peel.
  • Place in saucepan and cover with water.
  • Add all other ingredients and simmer for about one hour (or until tender).
  • Cool and enjoy. My kids like them diced so I remove from the pan and dice after they have been cooked.

  4. A nice light approach to "sweet and sour". Did use the smaller measurement of sugar. Was just right for the 7 beets I had from the farmer's mkt. Will fix this again, as it keeps well in the fridge. Thnx for posting, country_cook.

I just love to cook and collect lots of recipes! I find myself most comfortable in a kitchen. When I'm stressed, that's where I head, cooking and baking in the kitchen! I am married with two small kids. My husband and I are houseparents for a group home in Iowa. We work 24/7 as "parents" for troubled teenagers, making the home a family for these kids who don't really have one. We live where we work and have really enjoyed it.
