  • 8 14 ounces can tiny whole beets, chilled
  • 1 tablespoon snipped fresh basil or 1 tablespoon flat leaf parsley
  • 18 teaspoon ground black pepper
  • 4 tablespoons vinaigrette dressing (bottled reduced-fat or fat-free balsamic)
  • 4 cups mixed baby greens
  • 2 tablespoons coarsely chopped walnuts, toasted
  • 1 ounce semi-soft goat cheese, crumbled (chevre)

directions

  • Drain and cut up beets.
  • In a medium bowl, combine cut-up beets, basil, and pepper.
  • Drizzle with 2 tablespoons of the salad dressing; toss to coat.
  • Arrange greens on 2 salad plates; sprinkle with remaining dressing.
  • Top with beet mixture, walnuts, and goat cheese.

  3. I loved this beet salad. My favourite flavour was the fresh basil from my garden. I didn't really measure the walnuts so I probably used a bit more than 2 tbsp. Thanks for a delicious lunch. Made for Ramadan tag.

  5. Beautifund and tasty salad! We used parsley and basil and fresh cheese instead of goat cheese.<br/>The roasted walnuts are a good choice for the topping. I used some "wild" ones, they are more tasty!<br/>Thanks a lot for the recipe we all enjoyed it very much. If available next time I will use goat cheese.

Tweaks

  1. Romaine lettuce, mild home canned pickled beets and for the dressing I put the pepper and dry basil in good olive oil with a little vinegar. Minor changes but the recipe is so good and simple it turned out great!
     
  2. We really enjoyed this wonderful recipe. The sweetness of the beets is complimented by the tartness of recipe #166068 and the creamy goat cheese adds the crowning touch. The only change I made was to use toasted pecans in place of the walnuts. Definitely something I will make again.
