Why have I never cooked the beet greens by themselves before? I have always combined them with other greens. This is a super fast and easy recipe. It is quite tasty even with the omission of the bacon bits. This

This dish was very tasty. Prepared in my cast iron pan on the grill. Sauteed chopped bacon in olive oil first, added onion until soft and then added garlic. Substituted chicken broth for the white wine just because I didn't have any - and didn't use the entire 1/4 cup, used just enough to have a thin layer of juices in the bottom of the pan. I will not be discarding my beet tops when thinning my garden ever again. Thank-you for sharing this recipe.
