Beet Brownies

"I got this recipe from my mom. These are rich, chocolaty, incredibly moist absolutely some of the best tasting brownies I have ever tried. This is the only brownie recipe I use anymore. They are known around my house as "Mom's Brownies" to not give away the secret ingredient. They always disappear fast and no one ever knows they have beets in them!"

  • Beat together eggs and sugar.
  • Add oil, beets, cocoa and pudding, mix well.
  • Blend in vanilla, flour, soda and salt.
  • Bake in greased and floured 11 x 15 x 1" sheet cake pan for 30 minutes at 375.
  • Top with chocolate icing or glaze such as Nana Lee's #155392.

  1. Super good! I did adjust the recipe a bit to make it healthier. I used 3/4 c. egg substitute for the eggs: .5 c virgin coconut oil & .5 c. natural applesauce for the veggie oil: 4 roasted and pureed beets with water added to = 2 cups: 7 T dry cocoa powder for the cocoa: 1/2 whole grain spelt and 1/2 light spelt for the flour: Devils Food pudding mix and also added 1 T instant coffee granules. My pan was larger, so they were thinner. I baked them for 20 minutes and covered them with the suggested glaze. I cut them into 20 pieces and they are 200 calories each! PERFECT!
     
  2. I used fresh beets but didn't add extra liquid so I think they were a little dryer than they should have been. Kid, boyfriend and I all thought the brownies tasted great. We used Nana Lee's glaze as well and that wa sa nice, thin glaze for these. I originally gave these 4 starts (I think my first piece was extra dry). Everything after that was wonderful. I am definitely making these anytime I want brownies - why not have the extra boost?
     
  3. I'm so sorry to disparage your mum's recipe, but, if I'm to "spend" my calories, it has got to be for something REALLY tasty...and these just don't fill the bill. I will say, however, if you HAVE to have a way to increase veggies in your diet, I can think of worse ways to get 'em!! Thank you for sharing.

  5. Wow! These are fabulous!! The kids went crazy for them and just to clarify, there is no way anyone would suspect they contained beets. Cakey and very chocolatey. I used Nana Lee's Chocolate Glaze recipe #155392 which was suggested in the recipe and I very highly recommend the combination. Similar to a Texas sheet cake, except more chocolate flavor. I used a can of no salt added beets and meant to measure the cocoa when weighing but forgot. Cut these into 42 squares, which is still a rich treat but significantly reduces the fat and calories unless you eat a bunch like we did. Try them, I promise you'll like them!
