A quick, light, healthy, crunchy side salad!
- 1 lb raw beet, peeled and finely grated
- 2 ounces sunflower seeds, toasted
- 1 orange, juice and zest of
- 2 tablespoons fresh parsley, chopped
- salt and pepper
- Mix together the beet, orange juice and zest and parsley. Season well and allow to stand for 20 minutes.
- Just before serving stir in the toasted sunflower seeds.
