  1. Heat oil and butter in saucepan. Place apples, carrots and celery in pan and sauté, covered until softened.
  2. Add beets, juice, broth, bay leaf, salt and pepper. Bring to a low boil and cook covered about 20 minutes. Remove bay leaf.
  3. Puree soup with an immersion blender. Add cream just before serving.
