Beer Cheese Soup

"This is a family favorite picked up by my mom years ago. It was in a handout from an Ohio Swiss Colony handout. Enjoy! We love this recipe. (Because they wouldn't let me use "envelope" as a measurement, I omitted it but the soup mixes are all envelopes of dry soup mix.)"

  • 1 celery soup
  • 1 leek soup mix
  • 12 French onion soup mix
  • 5 cups water
  • 1 lb sharp cheddar cheese (cut into cubes)
  • 6 ounces beer, at room temperature

directions

  • Combine all soups mixes and water and simmer on medium until thick. Slowly add cheese, stir until smooth and add beer. Serve. Leftovers can be frozen and thawed in fridge.

  1. I have my favorite beer cheese soup recipe, but I needed something very quick and easy. I was pleasantly surprised. I don't always like boxed seasonings or soups but gave it a try. It was a bit salty for me, but overall, it was very good. 5 stars for ease and 4 for taste. I did use an amber beer and a mix of cheddar and monterey jack cheeses for a variety of flavor.<br/><br/>I did add some scallions as a garnish and crumbled bacon. Served it with some homemade crusty bread.<br/><br/>I would make it again. Very easy
