Delicious onion rings.
- 1 cup flour
- 1 cup beer (I prefer Budweiser)
- 2 large onions (I prefer Vidalias)
- vegetable oil (For Deep Fat Frying)
- Put the flour into a bowl and make a well in the center.
- Pour the beer into the well and whisk until combined.
- Let rest, covered for 1 hour.
- Peel onions and cut crosswise 1/3 inch thick and separate into rings.
- Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter.
- Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden.
- Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.
OMG my husband made these today and I ate so much I'm sick. He used Negra Modelo beer. We love it and will use this for beer batter fish and veggies.
Crispy but needs some seasoning. I only have enough batter for 1 onion.
DH & I both loved these rings & I esp loved how I felt doing something I'd never tried b4. I used Egils (an Icelandic premium lager) & took a tiny detour from the prep because I thought it would work better for me. I put all the rings in a shaker bag w/1 heaping tbsp of flour, shook the heck out of it & then let them sit in the bag while the batter rested. I had no trouble w/the batter coating or frying, the crunch was great & I was amazed how little oil they absorbed. Despite review comments Re seasoning, I didn't add any as DH is on a severely sodium-restricted diet. I'd normally add salt (or Old Bay) for myself, but was glad I didn't after I dipped the 1st ring in some ketchup for a taste test. Yum! Thx for sharing this recipe. Good stuff! :-)
