  1. Brown beef and onion 6 to 8 minutes in a large skillet over medium-high heat, stirring to break up meat.
  2. Drain fat; stir in thyme.
  3. Combine rice, red pepper, avocado and parsley in medium bowl.
  4. Add meat mixture; mix lightly.
  5. Whish together oil and vinegar.
  6. Pour over salad mixture; toss lightly.
  7. Season with salt and pepper if desired.
  8. Fill pita halves with lettuce, tomatoes and salad mixture.
