This was a really tasty casserole! I used canned green chilis instead of the bell pepper. I was worried when I made the cornbread batter because it seemed kind of runny, but it baked up just fine. It was a little greasy (maybe all that cheddar!?!) but very yummy!

I have made this several times now and everyone who has tasted it loves it. I usually do half with jalepenos and one half without for the toddler. We serve this with a lettuce and tomato black bean salsa salad. So quick and delicious this dish is jsut perfection.
