Official Contest Entry: Simply Potatoes 5Fix. Seasoned hash browns, ground beef and two types of cheese wrapped in a delicious corn biscuit. This is perfect to use leftover ground beef, meatloaf, hamburger patties, etc. We love that the hand pocket is easy to eat (no hassling the kiddos about using their fork!) and any leftovers get packed in school lunches the next day. The corn biscuit is a perfect way to add texture and sweetness to the ground beef. YUM!

  1. 1. In a skillet over medium heat, brown seasoned ground beef and frozen hash browns then drain completely and return mixture to the pan.
  2. 2. Add cream cheese and cheddar cheese until melted and thoroughly mixed together then let cool.
  3. 3. Flatten corn biscuits to a 3" disk being careful not to poke holes in the dough. Add 1/4 c cooled beef mixture to the center. Fold over and seal on the edges with a fork.
  4. 4. Bake at 350 in preheated oven for 20 minutes.
  5. 5. Let cool and serve over the remaining stuffing or just enjoy with your favorite dipping sauce.
