Beefed-Up Bloody Mary Soup

"The classic brunch cocktail warmed up, and beefed up with some broth and diced tomatoes into a hearty soup that's amazing with some scrambled eggs and toast. I suggest using your favorite Mary garnishes, like celery sticks, olives, and pickled okra as part of a little platter on the side. A shot of vodka in the soup is optional, but not bad. It's rich, satisfying, unique, and no one has to know it's this easy."

  • In a 2 qt saucepan, combine soup, broth, horseradish. Bring to barely a simmer, and allow to cook for 10-15 minutes to mellow the horseradish.
  • Add Worcestershire, hot sauce and tomatoes and heat through.
  • Squeeze lemon juice into soup to taste. I use the whole lemon, but start with half if you're not as big a lemon freak.
  • Serve, garnishing each bowl with some fresh cracked pepper and a sprinkle of celery salt.

  1. As every other reviewer, had everything on hand, and this packs a wallop of a taste sensation on the taste-buds. (In a great way too!) I found this to additive, and so easy to put together too. I confess to adding extra horseradish, as well as hot sauce, but I like things very spicy! The fresh cracked pepper on top was just perfect, and this is right on my list of wonderful soups for all seasons! Thanks for sharing such an innovative taste sensation!
     
  2. This truly was a good use of the contest pantry ingredients and a quick to fix solution for a busy day. The horseradish is a star in this soup and the lemon complements it all. I think next time I might use crushed tomatoes for a smoother texture. I served this with grilled cheese sandwiches and a relish tray of celery sticks, olives, and pickles.   3. This was a wonderful soup!!! Easy to make and I had everything on hand. Next time I might saute some diced onion and celery and add to the soup for a little more flavor and depth. Who would have thought to add horseradish to soup...it's fabulous. Thank you for a great recipe. Made for Craze-E contest 2009.
     
  4. What a perfect little recipe! I splurged and bought a can of soup (hard to find here in Greece and 4 Euros for one can!!!) but it was totally worth it. The addition of the horseradish is what got me. Just so good. I'm going to be making this a lot this winter, but I'll make my own homemade tomato soup next time. ;-) You have a winner here, chef.
     
  5. *Outstanding* No one would ever believe this was made from pantry items. So quick to put together, and unbelievably delicious. The lemon is a must, and puts the finishing touch to the soup. I used half of the lemon, and garnished with lemon zest. Next time, I may puree the soup a bit to make it a little smoother.
