Ingredients:

Servings: 12

• 3 lbs stew beef
• 2 lemons (use juice)
• 2 cups beef stock
• 2 onions , chopped
• 1 ½ teaspoons ground cumin
• 1 cup chopped green chilies (hot or mild)
• 2 cloves minced garlic
• 2 teaspoons oregano
• 1 tablespoon vinegar
• 1 tablespoon honey

Directions:

1. Marinate beef in lemon juice 8 hours or overnight.
2. Place all ingredients in an oven proof casserole dish (or slow cooker) and bake at 250F (low) for about 12 hours.
