Beef Satay

"I have been making this low-fat recipe for years. My family loves it and the numerous guests I have made it for also love it. The beef has a ton of flavor and is best served with peanut sauce. You will find a good peanut sauce recipe of you look up Creamy Asian Peanut Sauce on recipezaar."

directions

  • Cut the flank steak in half lengthwise and put in freezer for 30 minutes (to firm).
  • Combine soy sauce, oil, chili sauce, brown sugar, cilantro, garlic, and scallions in measuring cup, set aside.
  • Remove the flank steak from freezer and slice each piece across the grain into 1/4-inch-thick strips. Weave the meat onto bamboo skewers (should make about 24 skewers).
  • Dunk the meat ends of the skewers into marinade to coat; lay the skewers in a shallow dish and pour remaining marinade over top. Refrigerate for exactly 1 hour.
  • You can either grill the beef OR adjust oven rack to top position and heat broiler. Lay the skewers on a wire rack set over a rimmed baking sheet and cover skewer end with foil. Broil for 6 to 7 minutes, flipping the skewers over half way through, until meat is browned.
  • Serve immediately with peanut sauce.
