- 1 lb cooked roast beef or 1 lb ground beef, cut into small chunks
- 1 cup mild salsa
- 1 green bell pepper, trimmed and chopped
- 4 cups cooked rice or 4 cups cooked short pasta
- salt and pepper
- 1⁄2 lb cheddar cheese, diced
- In bowl, combine all ingredients with cheddar cheese.
- Season to taste with salt and pepper.
- Place in airtight container and chill until ready to serve.
- Serve cold or warm.
