Wife decieded I need to help a bit more with the cooking. I made this as one of my first dishes. Couple of recommendations, add about a Tbsp of oil to sear the meat and I added a bit more of the broth than what the recipe called for. Gravy was not totally thick but was sufficiently thick and very flavorful. Will make again. Need to practice rolling the meat though.

  1. Cut steak into 4 serving size pieces.
  2. pound with meat mallet until 1/4 inch thick.
  3. spread one side of beef piece with mustard.
  4. Place green pepper or green onion at short end of beef piece.
  5. Roll up and secure with toothpick.
  6. Spray skillet with nonstick spray coating and brown on all sides.
  7. Remove from skillet and add onion to skillet and cook until nearly tender.
  8. Stir beef broth and flour together in small bowl.
  9. Pour mixture into skillet and cook until thickened.
  10. Add chopped carrots and beef rolls.
  11. Cover and simmer for about an hour or until beef is tender.
