This is a great small casserole for two. Beef, rice, onions...what a great combination!

  1. Brown the ground beef in a skillet with the onion.
  2. In a casserole dish, combine the uncooked rice, peas, soup, can of water, salt and pepper.
  3. Add beef and onions and mix.
  4. Bake at 325* for 1 hour.

This turned out much better than I had initially thought it would. A fitting name for this recipe would be meatloaf casserole as the taste reminded me much of a good meatloaf. It was exceedingly easy to make. I used regular rice rather than instant and it turned out just fine. Served it with rolls.
