    This is a nice quick casserole. I don't particularly like mixed veggies, but this combination won me over.

    Ingredients:

    Servings:

    • 4 cups frozen hash browns, thawed (I used the shredded kind)
    • 3 tablespoons vegetable oil
    • 1/8 teaspoon pepper
    • 1 lb ground beef
    • 2 packages brown gravy mix
    • 1 cup water
    • 1/2 teaspoon garlic salt
    • 1 (10 ounce) package frozen mixed vegetables
    • 1 cup shredded cheddar cheese
    • 1 can fried onions

    Directions:

      Preheat oven to 400 degrees.

      In a shallow 1 1/2 quart baking dish, combine oil, hash browns and pepper.

      Press firmly to sides and bottom of dish.

      Bake uncovered@ 400 degrees for 15 minutes.

      Brown beef, drain.

      Stir in gravy pkgs, water, garlic salt.

      Bring to boil.

      Add veggies and reduce heat and cook for 5 minutes.

      Stir in 1/2 cheese and 1/2 can fried onions.

      Bake 15 minutes@ 350 degrees.

      Sprinkle remainder of cheese and onions on top and bake another 5 minutes.

      Not bad. Good for a quick meal on a busy night. I had to add some water with the gravy packets, because the mixture became so dry. Overall it was pretty good. No one raved about it, but everyone ate it! :-)
