I just made this for dinner tonight and I want to tell you it is so delicious. I wanted to eat more but. could not fit in anymore. I used left over roast and potatoes since they were soaked in roast juice. JUST AWESOME!!!!!!!!!!!!
This one is a winner. Usually I make soups with barley or potatoes, not usually noodles because they explode in size. I made this with some leftover lasagna noodles all chopped up and no such problem. Instead of bullion+broth/water, I used about a cup and a half of drippings from a roast plus a generous quantity of beef bone stock as well. I also added thyme, used tomato sauce instead of juice and forgot to add the sliced tomatoes, but it was fine. I appreciated being able to use up the lasagna noodles, roast drippings and cabbage. I also left out the green pepper. If I made it again rather than salt I might use worcheshire sauce. Super flavorful, great second meal after a roast.

Boy did we love this soup...I had two ribeye steaks left from a night out and morel mushrooms and the combo made a fabulous rich soup....will make often.
Oh my this sure does hit the spot on a winters day. I had a bowl for lunch but a larger serving with hot rolls or garlic bread with be a fine dinner. I started with fresh beef and the soup was complete and the meat tender in about 2 hrs. One of the things I love about soup is that it's so forgiving, no careful timing needed. I skipped the cabbage but everything else went into the pot. The outcome is simply delicious.
This is a nicely flavoured soup. The stewing beef I used turned out quite tough so next time I will use either ground beef or a cut up steak. Even though the meat was tough we did enjoy it. I will be making this one again. thanks for sharing your recipe. Made for PRMR.

This was really good and enjoyed by me a great deal this weekend. I prepared it with leftover Crock Pot Chuck Roast. I did leave out the cabbage because DH doesn't like it but followed the rest of the recipe as written. Thanks so much for sharing this with us. I was felling a little under the weather with a sinus infection and this was so simple to just throw together and it even made me fell better after eating it. Prepared for PRMR tag game.
