Beef Mushroom Barley Soup

- 1⁄2 lb ground beef
- 2 cups sliced fresh mushrooms
- 4 garlic cloves, minced
- 2 tablespoons butter
- 4 (14 1/2 ounce) cans beef broth
- 2⁄3 cup medium pearl barley
- 2 tablespoons soy sauce
- 2 medium carrots, sliced
- 1 teaspoon dill weed
- salt and pepper
directions
- In medium saucepan, brown ground beef. Remove to a plate. In same pan, saute mushrooms and garlic in butter for 5 minutes (med-low heat). Stir in the browned ground beef, broth, barley and soy sauce. Bring to a boil. Reduce heat; cover and simmer for 20 minutes.
- Add the carrot, dill, salt and pepper (if desired). Cover and simmer for 15 more minutes, or until barley and carrot are tender.
