Beef Enchiladas

"My mom created this recipe and when I tried it I was amazed! It is very, very tasty and super easy to make. Tip: If you have extra filling, like I did, just pour over the top of tortillas and top with extra cheese. You could then add salsa, olives, etc. on top as well. Special Note: I put in 8 oz. cans as I could not remember the can size of each ingredient. Just pick up the normal can size for each item at your grocery store."

  • Brown ground beef with chopped onion.
  • Simmer beef with all remaining ingredients except cheese.
  • Cool and mix with shredded cheese.
  • Roll in tortillas.
  • Bake in greased 11 x 14 inch pan at 350 degrees for 35 minutes.

  1. For being pretty basic enchiladas, they are fabulous!! I used a homemade enchilada sauce http://www.food.com/recipe/enchilada-sauce-457377 and instead of adding the cheese inside the enchiladas I topped them with it :) YUM!!
     
  2. The photo doesn't do this justice - so good. I used 1 medium and 1 mild enchilada sauce (10 oz. each) - if your not a spicy food fan, stick with mild, 4.5 oz can of green chilies, 10 oz. can of rotel, 15 oz. can of black beans, and i cut the cheese in half in an attempt to make it a little healthier (hahaha), and i could only fit 6 tortillas in my dish, so i poured the rest of the filling on top, and baked. My super picky boyfriend went back for seconds. Thanks for posting. Made for PAC Fall 2009

I am wife to my hunky hubby Chris. I am also a stay at home, extended breasfeeding, extended rear facing, delay/anti vax, babywearing, homemade baby food making, and cloth diapering mama to the most beautiful and precious 21 month old little girl out there. We are expecting our second child in May. We are also adopting a child hopefully in the near future (check out our website for additional information). Since having my daughter, Zoelle, I have decided I need to teach myself to cook. In the past, I have always been busy with school, but now that I am home, I have the time, so I must learn. My hubby has a passion for cooking and has always watched the cooking shows. I have picked up on that passion and done my best to experiment and have fun with cooking. We often cook together and that is one of the highlights of my day. I have learned that I prefer to bake over cook any day, but that if I want to keep a waistline, I must cook! I like to try cooking and baking fancy things. I have a huge desire to make my daughter a fancy one year old birthday cake. Just for the fun of it, I know she won't remember...but I will!
