Beef Enchiladas

"This is a FABULOUS recipe for beef enchiladas! I got this recipe from my stepmom several years ago...and my family just loves them! I usually serve them with Mexican rice and a salad! This makes a big batch so there are always leftovers! Enjoy!"

  1. Love this recipe! The sauce is great, much better than the cream of chicken soup type.

  2. FABULOUS really is the correct work to describe these. Great flavor and my DH says this is one of his favorite dishes now. Did use Taco Bell Taco Seasoning Clone (105993). Thanks slkendrick for sharing such a YUMMY recipe.

I have been living in Charlotte for 8 years now and was not much of a cook until I got married 3 years ago. Since then, my poor husband has become my guinea pig and has had to suffer through many recipe trials. Now I have expanded to doing recipe trials for him and our little boy!! I love to collect recipes...this site is addictive! Although a lot of the recipes I print out seem to go into a 'To try' binder!! I'll get to them eventually!
