  • Coat beef and onions in flour and brown in butter in a large pot.
  • Add beef broth, curry powder, and bay leaves. Simmer for 30 minutes.
  • Add potatoes, vinegar, and salt. Simmer for another 60 minutes.
  • Serve over rice if desired.

  2. Yummy! I couldn't believe how wonderful this smelled when cooking. I couldn't believe I made it....it smelled like an Indian restaurant in my house! My husband and I really enjoyed. The next time I make (which will be soon) I am going to throw some frozen peas in it! Thanks for the great recipe.
     
  3. This was a really nice soup! I liked that it did not involve a lot of prep and was easy to make. The only modification I made was to dice my potatoes. My curry powder was a little on the hot side as I did not have a mild curry on hand. It still worked very well in the dish. Thanks, Slatts!
     
  4. Finding curry to be one of my favorite spices - it really gave this soup a special flavor. Even the non soup fan had two bowls. Made using a touch less curry powder but think the full amount would be perfect. Do add that vinegar, it so mellows the soup! Our kind of soup. Thank you for sharing.
     
  5. Very good easy soup. I like my curry mild, so I used my own curry mix and adjusted the spices accordingly.

Tweaks

  1. Excellent soup! I used extra lean veal in place of the beef stew meat to cut the fat a bit. We loved the rich beef and curry flavour. The only thing I would say is watch the salt. I halved the amount, and it was plenty for us. Yum! Thanks Slatts! Made for ZWT 4.
