I spent an day looking after a family members home while workmen were there to install a new security entranceway (they are away on holiday) so to keep me busy I decided to go through their cookbooks looking for some recipes to post on 'zaar.
- 1 1⁄2 kg chuck or 1 1⁄2 kg blade steaks, cut into large cubes
- 60 g plain flour
- 2 teaspoons spanish paprika
- 400 g peeled tomatoes with juice
- 1 glass white wine or 1 glass red wine
- 2 onions, diced
- 2 garlic cloves, sliced
- 1 stalk celery, finely sliced
- 3 medium potatoes, cut into large chunks
- salt and black pepper
- Preheat oven to 180°C.
- Roll beef in flour mixed with paprika.
- Put into an enamelled, cast iron casserole that will hold all the ingredients comfortably with not too much extra space.
- Whiz tomatoes and their juice in a food processor, or crush roughly with a wooden spoon, then add to meat.
- Add remaining ingredients to casserole and stir.
- Press a piece of baking paper over contents and cover with lid. Cook in oven, undisturbed for 2 hours.
- Season to taste. Check if meat and potatoes are tender and if necessary cook longer.
- Serve with a bowl of yoghurt, perhaps a small bowl of sliced pickled dill cucumbers or if you are happy to use another pot, steamed cooked carrots or other vegetables alongside.
Fabulous! I added carrots in large chunks and more celery. Due to being a non - drinking family there is no wine, so I added dark grape juice - perfect. I doubled the liquid so it was more "soupy" as I added herb dumplings in the last 20 minutes of cooking, it became a one pot meal. What a great meal to have on a cold wet winter night. thanks for posting!!
Even with my boo boo this came out great. I halved the recipe and cooked in my stoneware casserole dish as the cast iron pot I have needs about 5 to 6 kilos of meat to fill it but I was 40 minutes into the cooking time when I realized I forgot the put the baking paper over the mix AAAAGHH so though better late than never and glad I did otherwise I think it would have been way too dry and even then I think mine could have done with another 15 minutes but I did cut my meat really chunky but we devoured the lot and the DM was the real surprise as she ate up the lot (with her dementia it is a real struggle at times to get her to eat so I am so happy when something comes together so well). My original idea was to just serve with steamed carrot and bok choy for greens (which the DM wouldn't eat) but she requested recipe #448359 and wel anything to get her to eat and was happy to oblige (and it meant I could get a reasonably decent photo of it to the recipe). Thank you Jewelies and I have enough left over to freeze as a meal for the DM when we have one of our intense curry recipies which we know she does not like. Simple, delicious and is the "put it on & leave it" recipe my DH loves. I think next time I would cut our meat & vegies into larger chunks because everything seemed to melt together but that was our fault not the recipe. We added some dutch carrots whole which we thought were a lovely addition. Thanks Jewelies this is a keeper & I hope it gets more reviews.
