From the "Fifty From The Trail", The best Cowboy Cooking From A Timeless Land cookbook. Good in the kitchen or over a campfire. I serve it with a crusty bread.

  1. Render salt pork or bacon in a large stew-pot.
  2. Add meat.
  3. Cook over medium high until browned.
  4. Remove meat.
  5. Reduce heat to medium.
  6. Add onions and cook until tender.
  7. Return meat to pot.
  8. Add seasonings, beer, water, tomato paste and Worcestershire sauce. Stir and cover.
  9. Simmer until beef is tender, about 1 ½ hours.
  10. Add vegetables, cover and simmer until done, about 45 minutes.
