• Wipe and trim the meat and cut into 1 1/2" cubes. Season the flour with the salt and pepper and toss the pieces of meat until evenly coated. Peel and slice the onions.
 • Heat the oil in a heavy based saucepan and fry the onions until transparent. Add the meat and fry until browned all over. Then add the remaining flour.
 • Gradually add the beef broth and bring to a boil, stirring constantly. Add the tomato paste, bay leaf, and season with a little salt and pepper. Reduce heat, cover and simmer for 1 hour.
 • Meanwhile, scrape the carrots and peel the potatoes and parsnips. Cut all into bite-sized chunks and add to the meat. Cover and simmer for a further 30 minutes.
 • Taste and adjust seasonings. Stir in peas and simmer for another 10 minutes, then serve.

 1. This is a great basic beef stew recipe! I only used 1 lb. of meat and threw in lots of veggies (raw cauliflower, raw sweet potatoes, frozen corn and green beans) to still come out with 6 servings. 4.5 stars would be a more accurate rating from me as the stew is missing garlic (I ended up adding a tablespoon or two of garlic powder at the end) and the cooking times were off for me. It took much longer for my veggies to get tender, but maybe that's because I had so many? Anyway, the meat was very tender and the stew was yummy once I added LOTS of pepper. It came out tasting just like I wanted it, too!

 2. I decided to give this a shot since I had all of the ingredients and thought it would be nice on a chilly night. I have never considered myself a huge stew fan, but this one has changed my mind. It was very good, a lovely comfort meal. The only change I made was to halve it since I was just cooking for two; it worked great. Thanks for the recipe! I will definitely make this again on another chilly evening.

I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston. As much as I miss family back home, I truly love living here - the beaches, the tropical beauty, the people, and the weather (except the hurricanes!). Everyday is just another day in Paradise. I work at the new international airport here in Fort Myers. I have an opportunity to meet many different and interesting people from around the world. I've had an interest in cooking since I was a little boy, following my grandmother around the kitchen. Since I wasn't blessed with any artistic or musical talent, I think cooking was my way of being creative. My passion is my family and friends. My second passion is cooking for them. My favorite way to entertain is informally...brunches, cookouts, and small dinner parties. Just relaxing, enjoying each other's company, some good food and drink, and a little fun are the only rules of the house.
