A quick and simple dinner for the weeknight. This is also great for company. To make a pretty presentation, top each serving with a dollop of sour cream and guacamole.

  1. Preheat oven to 375 degrees.
  2. Heat medium skillet over medium-high heat; add beef and onion.
  3. Cook until beef is brown and crumbly, about 10 minutes.
  4. Drain the grease off the beef.
  5. Add enchilada and tomato sauces to skillet; stir well.
  6. Cook until slightly thickened, about 10 minutes.
  7. Spoon beef mixture into a greased 2-quart baking dish.
  8. Combine beans and evaporated milk in a small bowl; spread over beef mixture.
  9. Arrange whole tortilla chips around the edge of dish.
  10. Top casserole with crushed chips; sprinkle with cheese.
  11. Bake casserole until hot and bubbly, about 20 minutes.

I felt that there wasn't enough spices to this recipe. Like the previous poster, I thought there was something "missing". If I made it again, I would skip the tomato sauce and add a jar of salsa, sprinkle the ground beef with some MExican Oregano, Cumin, chili powder & garlic, and skip the evaporated milk all together.

I chose this recipe for the Camera-less Chef Game 2007.And as the previous Chef,I used a 6 ounce can of tomato paste instead of the sauce.Instead of using a 2/3 cup of milk I only used 1/3, mixed with the beans it worked just fine.Since I really like cheese,I added about 1/2 cup more.I'm not sure if this will be made again,both my SO and I agreed that there was just something "missing" in the taste of the recipe."Keep Smiling :)"

Couldn't believe how yummy this was considering how EASY it was to put together. I had all the ingredients on hand and my BF was in the mood for something he could put lots and lots of sour cream on. This hit the spot. After reading the other reviews, I decided to substitute a 6 oz can of tomato paste for the tomato sauce so it would not be so runny. It worked out great...not runny at all... held together beautifully! I probably will not put crushed chips on top next time... they were not the greatest texture when I heated up some leftovers the next day but that is my preference. And I will probably add more cheese since my BF and I love cheese! Great, simple, tasty meal with a little side salad and salsa! Thanks!
