This comes from Sunset's Light Ways with Beef, Lamb and Pork cookbook.
- 1 egg white
- 1⁄4 cup dry red wine
- 1⁄3 cup soft breadcrumbs
- 1⁄8 teaspoon pepper
- 2 tablespoons parmesan cheese, grated
- 1 onion, finely chopped
- 1 1⁄2 lbs ground beef
- 1 cup spinach, finely chopped or 1⁄2 cup frozen spinach, thawed and well drained
- In a medium bowl, beat together egg white and wine. Stir in bread crumbs, pepper, cheese and onion. Lightly mix in beef and spinach. Shape into 6 patties about 3/4 inch thick.
- Place patties on a greased grill. Cook patties, turning once until done.
I really liked these patties. I used a little less beef than required, but still found the mixture to be dry and used a whole egg. Still dry, so I added a bit of kefir. The patties held together, but only just. No salt is listed in the ingredients, and while I cook very low sodium, I think you need some salt in this dish, so I added maybe 1 tsp or so. I liked the raw onion in this - I used a red one - as it retained more crunch that was nice. Loved how the spinach looked. I pan grilled these, and then made a gravy with the pan juices. Served with turmeric potatoes and mixed vegetables for a satisfactory supper.
I made this tonight, and cooked it on my outdoor grill. They absorbed a nice smokey taste. There was something missing in the flavor. They were a bit flat. But I appreciate the extra vitamins that the spinach added! Made for Newest Tag game. Thanks for sharing your recipe!
